MAINS COURSE

- Aged piece of beef on a truffle pomme puree with wild mushrooms sauce.
- Stuffed organic poussin with a rich red wine glaze served on a bed of wild rice and seasonal vegetables.
- Trilogy of duck on my inspiration.
- Herb crusted rack of lamb on fondant potatoes, ratatouille with a light lamb jus.
DESSERTS
- Trio of crème brulee (pistachio, lavender, fresh vanilla).
- Iced nougat served with fresh fruit coulis.
